Ingredients :

Vadai Kari Gravy

For Vadai:


Kadalai Paruppu | Bengal Gram - 1\2 cup
Shallots | Sambar Onion - 2 tbsp
Green Chili - 1 no (finely chopped)
Crushed Ginger - 1 tsp
Crushed Garlic - 1 tsp
Asafoetida - 1\4 tsp
Fennel Seeds - 1\2 tsp
Coriander Leaves - 2 tbsp (finely chopped)
Oil - deep fry

For Gravy:


Cinnamon Stick - 2" long
Cloves - 3 nos
Fennel Seeds - 1\2 tsp
Shallots | Sambar Onion - 1\2 cup
Curry Leaves - 2 stk
Crushed Ginger - 1 tsp
Crushed Garlic - 1 tsp
Tomato - 1 no (chopped)
Green Chili - 2 no (slit)
Red Chili Powder - 1 tsp
Coriander Seeds Powder - 1 and 1\2 tsp
Turmeric Powder - 1\4 tsp
Coriander Leaves - 2 tbsp (finely chopped)
Crystal Salt - as required
Oil - 2 tbsp.

Method :
Vadai Kari Gravy

Steps To Make The Vadai Kari Gravy:

  • Preparation, wash and soak the kadalai paruppu for about 2hours. (Image 1)
  • To make the vadai, grind the soaked kadalai paruppu without water coarsely. (Image 2 and 3)
  • In mixing bowl, add the ground kadalai paruppu, shallots, green chili, ginger, garlic, asafoetida, fennel seeds, coriander leaves and required salt, mix well altogether. (Image 4 and 5)
  • Make vadai in hot oil and cook until 3\4th only. (Image 6)
  • Then break the vadai into small pieces and keep aside.
Vadai Kari Gravy
  • To make the vadai kari gravy, heat the oil in a kadhai and roast the fennel seeds, cinnamon stick and cloves. (Image 8)
  • Then add the onion and curry leaves, saute until the onion turns light brown colour. (Image 9)
  • Add the ginger and garlic, saute until its raw smell leaves completely. (Image 10)
  • Add the tomato and green chili, saute until the tomato turns tender. (Image 11)
Vadai Kari Gravy
  • Stir in the red chili powder, coriander seeds powder and turmeric powder for few seconds. (Image 12)
  • Add 4 cups of water and bring to boil. (Image 13)
  • Then add the prepared vadai pieces, cook for about 5 to 7 minute over medium flame. Finally add the coriander leaves, mix gently and ready to serve. (Image 14 and 15)
Vadai Kari Gravy
Serving Suggestion: Serve the vadai kari gravy with the dosai, idli, chapathi or poori.
