Ingredients :

Basmathi Rice - 1 cup (washed and soaked 15mins)
Mint Leaves - 3\4 cup
Coriander Leaves - 3\4 cup
Green Chili - 3 no
Cinnamon Stick - 2" long
Cloves - 3 no
Bay Leaf - 1 or 2 no
Onion - 1 no (thinly sliced)
Ginger Garlic Paste - 1 tsp
Sweet Corn Kernels - 1 cup
Curd - 1\4 cup
Ghee or Butter - 2 tbsp
Salt to Taste.

Method :

Steps To Make The Mint Coriander And Sweet Corn Pulav Recipe:

  • First grind the mint leaves, coriander leaves and green chili into paste with 1\2 cup of water and keep aside. (Image 1 and 2)
  • To make the pulav, heat the ghee in a pressure cooker pan and roast the cinnamon stick, cloves and bay leaf. (Image 3)
  • Add the onion and saute until the onion turns slightly golden colour. (Image 4)
  • Add the ginger garlic paste and stir till its raw smell leaves completely. (Image 5)
  • Then add the sweet corn kernels and curd, mix well for few seconds. (Image 6)

  • Add the ground mint-coriander-chili paste and mix well. (Image 7)
  • Add a cup of water and required salt, mix well and bring to boil. (Image 8)
  • Add the soaked and drained basmathi rice, mix gently. (Image 9 and 10)
  • Cover and pressure cook for an whistle and 3 to 5mins over simmer. When all the steam has released, open the pan. (Image 11)
  • Then mix gently and ready to serve. (Image 12)

Serving Suggestion: Serve the pulav hot with onion raita and mushroom fry.
