Ingredients :

Sweet Corn Kernels | Cholam - 1 cup
Capsicum - 1 no (square cut)
Cinnamon Stick - 2" long
Cloves - 3 nos
Onion - 1 no (chopped)
Ginger Garlic Paste - 1 tsp
Tomato - 2 no
Cashews - 15 to 20 nos
Red Chili Powder - 1 and 1\2 tsp
Cumin Seeds Powder - 1 tsp
Turmeric Powder - 1\4 tsp
Oil - 2 tbsp
Crystal Salt to Taste.

Method :

Steps To Make The Sweet Corn - Capsicum and Cashews Gravy:

  • First pressure cook for the sweet corn kernels with half a cup of water for 1 whistle and 3mins over simmer. When all the steam has released, open the pan and keep aside.
  • To make the gravy, heat the oil in a kadhai and roast the cinnamon stick and cloves. (Image 2)
  • Add the onion and saute until the onion turns slightly golden colour. (Image 3)
  • Add the ginger garlic paste and saute till its raw smell leaves. (Image 4)

  • Add the tomato and cashews, saute until the tomato turns soft. (Image 5 and 6)
  • Then cool the onion-tomato mixture and grind into fine paste. (Image 7 and 8)

  • Heat the ground onion-tomato mixture, a cup of water and required salt, mix well and bring to boil. (Image 9)
  • Add the red chili powder, cumin seeds powder and turmeric powder, mix well and cook for an minute. (Image 10)
  • Finally add the capsicum and pressure cooked sweet corn, mix well and cook for about 3 to 5 minutes over simmer. (Image 11 and 12)
  • Ready to serve.

Serving Suggestion: Serve the sweet corn and capsicum gravy with the poori, chapathi, naan, idli or dosai.
