Ingredients :

Vallarai Keerai - 1 cup (washed, chopped)
Kadalai Maavu | Besan Flour - 1 cup
Rice Flour - 1\4 cup
Butter - 1 and 1\2 tbsp
Shallots | Sambar Onion - 1\2 cup (chopped)
Green Chili - 2 no (finely chopped)
Crushed Ginger - 1 tsp
Crushed Garlic - 4 to 5 cloves
Fennel Seeds - 1\2 tsp
Asafoetida - 1\4 tsp
Salt to Taste
Oil for deep fry.

Method :

Steps To Make The Vallarai Keerai Pakkoda:

  • To make the pakkoda dough, In a mixing bowl, add the besan flour, rice, butter and salt, mix well altogether. (Image 1 and 2)
  • Then add the vallarai keerai, shallots, green chili, ginger, garlic, fennel seeds and asafoetida, mix well. (Image 3 and 4)

  • Then sprinkle required water little by little and mix into soft dough. (Image 5)
  • Heat the enough oil in a kadhai, grease your hand and make pakkoda on hot oil in small batches, cook over medium flame until golden colour and ready to serve. (Image 7)

Serving Suggestion: Serve the Vallarai Keerai Pakkoda with Sambar Rice or Milk Rice.

What is the shelf life for this vallarai keerai pakkoda?

Hi unknown, vallarai powder will change the taste completely, So better to use fresh leaves only. Also it shelf life is around 2 days. To keep them crispy, fry them twice and store in a air tight box.
