Ingredients :

Kathirikkai | Brinjal - 250 gm
Cloves - 2 no
Cinnamon Stick - 2" long
Onion - 1 no (chopped)
Curry Leaves - 2 stk
Tomato - 1 no (finely chopped)
Ginger Garlic Paste - 1 tsp
Red Chili Powder - 1 tsp
Fennel Seeds Powder - 1\2 tsp
Cumin Seeds Powder - 1\2 tsp
Pepper Powder - 1\2 tsp
Turmeric Powder - 1\4 tsp
Coriander Leaves - 2 tbsp (finely chopped)
Oil - 2 tbsp
Salt to Taste.

Method :

Steps To Make The Spicy Kathirikkai | Brinjal Poriyal:

  • First cut the kathirikkai and immerse in the ordinary water to avoid discoloration. (Image 1)
  • To make the poriyal, heat the oil in a hot kadhai and roast the cloves and cinnamon stick. (Image 2)
  • Add the onion and curry leaves, saute until the onion turns slightly golden colour. (Image 3)
  • Add the tomato and ginger garlic paste, saute until the tomato turns soft. (Image 4)

  • Add the kathirikkai | brinjal and cook for about 2 to 3minutes. (Image 5)
  • Add the red chili powder, fennel seeds powder, cumin seeds powder, pepper powder, turmeric powder and required salt, mix well and stir for few seconds. (Image 6)
  • Add half a cup of water, mix well and bring to boil. (Image 7)
  • Cover and cook for about 5mins or until dry over medium flame, by stirring frequently. (Image 8)
  • Ready to serve.
