Ingredients :

Vallarai Keerai Sambar
Vallarai Keerai - 1 cup
Thuvaram Paruppu | Toor Dal - 1\2 cup
Asafoetida - 1\4 tsp
Turmeric Powder - 1\4 tsp
Red Chili Powder - 1 tsp
Cumin Seeds Powder - 1\2 tsp
Pepper Powder - 1\2 tsp
Tomato - 2 no (large, chopped)
Shallots - 1\4 cup
Garlic - 3 to 4 cloves
Mustard Seeds - 1\4 tsp
Ulundu | Urad Dal - 1\4 tsp
Shallots - 1 tbsp (finely chopped)
Oil - 1 tsp + 1 tbsp
Salt to Taste.

Method :
Vallarai Keerai Sambar

Steps To Make The Vallarai Keerai Sambar:

  • First pressure the thuvaram paruppu with asafoetida, turmeric powder, teaspoon of oil and 1 and 1\2 cup of water for 1 whistle and 3 to 5mins over simmer. When all the steam has released, open the pan. (Image 1 and 2)
  • Add the red chili powder, cumin seeds powder and pepper powder, mix well. (Image 3)
  • Add the vallarai keerai, tomato, shallots, garlic, 1\2 cup of water and required salt, mix well. (Image 4 and 5)
  • Cover and again pressure cook for 1 whistle and 2mins over simmer. Again when all the steam has released, open the pan. (Image 6)

  • Separately heat the remaining oil and temper the mustard seeds and urad dal. After splutter add the shallots and saute until slightly golden colour. (Image 7)
  • Add the sauteed onion mixture into the pressure cooked sambar, then mix well and ready to serve. (Image 8 and 9)
