Ingredients :

Marinate:


Mutton | Attu Kari - 1\2 kg
Onion - 2 no (sliced)
Ginger Garlic Paste - 1 tsp
Red Chili Powder - 1 tsp
Coriander Seeds Powder - 1 tsp
Cumin Seeds Powder - 1\2 tsp
Mint Leaves - 1\4 cup cup
Coriander Leaves - 1\4 cup (chopped)
Curd - 1\2 cup
Salt - as required.

Curry:


Cinnamon Stick - 2" long
Cloves - 3nos
Bay Leaves - 1 or 2 nos
Sha Jeera - 1\2 tsp
Shallots - 1\4 cup (chopped)
Ginger Garlic Paste - 1\2 tsp
Red Chili Powder - 1\2 tsp
Coriander Seeds Powder - 1\2 tsp
Cumin Seeds Powder - 1\4 tsp
Garam Masala - 1\4 tsp
Turmeric Powder - 1\4 tsp
Mint Leaves - 1\4 cup
Coriander Leaves - 1\4 cup (chopped)
Oil - 2 to 3 tbsp
Salt to Taste.

Method :

Steps To Make The Mutton Spicy Masala Curry Recipe:

  • To make the brown onion, heat quarter cup (+ or -) of oil in a kadhai and add the sliced onion. cook slowly over simmer until the onion turns golden brown colour by stirring frequently and keep aside. (Image 1 and 2)
  • To marinate, combine the mutton pieces, brown onion, ginger garlic paste, red chili powder, coriander seeds powder, cumin seeds powder, curd, mint leaves, coriander leaves and required salt, mix well and marinate for an hour. (Image 3 and 4)

  • To make the mutton spicy masala curry, heat the oil in a pressure cooker pan and roast the cinnamon stick, cloves, bay leaves and sha jeera. (Image 5)
  • Then add the shallots and saute until the shallots turns slightly golden colour. (Image 6)
  • Add the ginger garlic paste and saute until its raw smell leaves completly. (Image 7)
  • Add the red chili powder, coriander seeds powder, cumin seeds powder, garam masala and turmeric powder, mix well for few seconds. (Image 8)

  • Add the marinated mutton and saute for about 2minutes. (Image 9)
  • Add the mint leaves and coriander leaves, mix well. (Image 10)
  • Add a cup of water, mix well and bring to boil. Then cover and pressure cook for an whistle and 15 to 20minutes over simmer. When all the steam has released, open the pan, mix well and ready to serve. (Image 11)
