Ingredients :

Kuthiraivali Vegetables Adai
Kuthiraivali Arisi | Barnyard Millet - 1\2 cup
Kadalai Paruppu - 1\4 cup
Thuvaram Paruppu - 1\4 cup
Pasi Paruppu - 1\4
Ulundu - 1\8 cup
Dry Red Chili - 2 no
Fennel Seeds - 1 tsp
Asafoetida - 1\4 tsp
Onion - 1 no (chopped)
Carrot - 1\4 cup (finely chopped)
Beans - 1\4 cup (finely chopped)
Grated Coconut - 1\4 cup
Coriander Leaves - 2 tbsp
Oil or butter - 1 tbsp + required
Salt to Taste.

Steps To Make The Kuthiraivali Mixed Vegetables Adai | Barnyard Millet And Vegetables Adai:

  • Soak the kuthiraivali arisi, kadalai paruppu, thuvaram paruppu, pasi paruppu, ulundu and dry red chili with enough water for about two hours. (Image 1)
  • Drain the water. Then grind the soaked ingredients, fennel seeds, asafoetida and required salt into little coarsely with required water and keep aside. (Image 2 and 3)

  • Heat a tablespoon of oil in kadhai, add the onion, carrot and beans, saute for an minute. (Image 4)
  • Add the cabbage and required salt, mix well. Then add quarter cup of water and cook fully. Remove from the flame. (Image 5 and 6)
  • Add the coconut and coriander leaves, mix well and cool the vegetables mixture. (Image 7)
  • Mix the vegetables mixture into the ground kuthiraivali batter and the adai mixture is ready. (Image 8 and 9)
  • To make the adai, heat the iron tawa, pour a large laddle full of batter (or required) in the center. (Image 10)
  • Spread into circle with 1\2 cum thickness. (Image 11)
  • Make some holes using spoon. (Image 12)
  • Add a teaspoon of oil or butter. (Image 13)

  • Cover and cook over simmer. (Image 14)
  • Cook till the slightly brown spots appear on both sides. (Image 15 and 16)
  • Do the same for the remaining batter and serve hot.
