Ingredients :

Mananthakkali Keerai - 1 cup (washed, chopped)
Thuvaram Paruppu | Toor Dal - 1\4 cup
Turmeric Powder - 1\4 tsp
Asafoetida - 1\4 tsp
Sambar Onion | Shallots - 1\2 cup
Tomato - 2 no (chopped)
Green Chili - 1 no
Red Chili Powder - 1 tsp
Coriander Seeds Powder - 1 tsp
Mustard Seeds - 1\4 tsp
Urad Dal - 1\4 tsp
Fenugreek - 1\4 tsp
Curry Leaves - 1 stk
Oil - 1 tsp + 1 tbsp
Ghee - 1 tbsp
Salt to Taste.

Method :

Steps To Make The Manathakkali Keerai Sambar | Black Nightshade Greens Sambar:

  • First pressure cook the thuvaram paruppu with turmeric powder, asafoetida, teaspoon of oil and a cup of water for 1 whistle and 3 to 5 minutes over simmer. When all the steam has released, open the pan and keep aside. (Image 1)
  • To make the sambar, heat the remaining oil in a kadhai or pan, add the shallots and saute until it turns slightly golden colour. (Image 2)
  • Add the tomato and green chili, saute until the tomato turns soft. (Image 3)
  • Add the manathakkali keerai and saute for about two to three minutes. (Image 4)
  • Add the red chili powder, coriander seeds powder and required salt, mix well for few seconds. (Image 5)
  • Add the pressure cooked thuvaram paruppu and mix well. (Image 6)

  • Now add half a cup of water, mix well and boil for two minutes over simmer. (Image 7)
  • To temper, separately heat the ghee in a pan and temper the mustard seeds and urad dal, after splutter add the asafoetida and curry leaves, mix well and remove from the flame. (Image 8)
  • Then add the tempered ingredients into the sambar mixture, mix well and ready to serve. (Image 9)
