4th Anniversary Special Recipe - Homemade Vanilla Milk Ice Cream is very creamy, light and melts in mouth, is made from the milk, milk powder, cream, sugar, C.M.C, G.M.S, liquid glucose and simple ingredients, with step by step images and instructions. This ice cream take 2 to 3 days to set. But really you need some patience to make. This is the basic vanilla ice cream recipe. With this basic recipe, you can easily make any flavors like butterscotch, pineapple, orange, tutti fruity, chocolate and any thing. Lets see how to make homemade vanilla milk ice cream recipe...


Ingredients :

Ice Cream
Milk - 700ml
Sugar - 3\4 cup
Milk Powder - 1\4 cup
Liquid Glucose - 1 tbsp
Gms - 1 tbsp
Cmc - 1 tsp
Fresh Cream - 200ml
Vanilla Essence - 1 tsp ( + or -)

Steps To Make The Homemade Vanilla Milk Ice Cream :

Heat the milk in a heavy bottom pan and bring to boil. Meantime, mix the milk powder and sugar in a bowl. When the milk starts boiling, add the milk powder-sugar mixture and mix well. Boil for five minutes and simmer the flame.

Parallely, heat the 1\4 cup of water in a separate pan, bring to boil and simmer the flame, then add the liquid glucose and mix well to dissolve. Separatly dissolve the C.M.C and G.M.S with some water, add them in to the water mixture, cook till little thick and remove from the flame. Strain this mixture into the milk and cook for an minute. Remove from the flame and ice cream base is ready.
Ice Cream
Cool the ice cream base and transfer into the plastic or aluminum container, set in the freezer till firm. Once firm, remove from the freezer and beat well. Then add the fresh cream and vanilla essence, beat well till double the volume so use large container.

Again set in the freezer till firm, using ladle break into small pieces and beat well again till creamy, it take for about 4 to 5minutes and set in the freezer till firm, continuous to do for 3 to 4 times to get light and creamy ice cream.

Serving Suggestion : Serve the homemade vanilla milk ice cream with the melted chocolate, pineapple crush or your choice.

Variation : For butterscotch flavor use butterscotch essence, butterscotch crush and butterscotch candies. For pineapple flavor use pineapple essence, pineapple crush and pineapple fruit pieces. Similarly you can use any essence and fruits.

Regarding the ingredients, please clarify what is GMC, CMC and liquid glucose?
Where can I get these?

Hi Maha, Thank You very much.
G.M.S and C.M.C are ice cream stabilizers. C.M.C is setter, G.M.S is softener, it helps to prevent crystallization and liquid glucose is also helps to soften the ice cream. You can get all these at bakery raw materials suppliers store. But C.M.C and G.M.S are easily available in big bazaar, nilgiris and all major departmental stores in Chennai. If you not get the liquid glucose means leave it because G.M.S is enough. Hope I have cleared your doubts.

Hey! Is cmc and stabilizer same? Can I use heavy cream and if yes, how much?

Hi Kritika Jain, C.M.C and G.M.S ice cream stabilizers are not same. C.M.C is ice cream setter and G.M.S is ice cream softener. Instead of stabilizers you can also use heavy cream (whipped), but it texture will turns like mousse. So I will try with heavy cream soon and then I will tell you the exact quantity.
