Freshly Roasted Masala Kaadai Gravy | Quail Gravy recipe - Today we bought kaadai without any idea. Already I posted kaadai fry, gravy and biryani recipe. So I really don't know what to make newly. Suddenly my mom told me this recipe idea. Actually we used simple ingredients only. But freshly roasted masala is totally changed the gravy flavour and taste. Now lets see how to make this kaadai gravy in a easy pressure cooking method with easy step by step images and instructions. Follow the recipe as below...

Kaadai | Quail - 4 no (full, cleaned, washed) |
Cinnamon Stick - 2" long |
Cloves - 3 no |
Star Anise - 1 no |
Dry Red Chili - 5 no |
Cumin Seeds Powder - 1 and 1\2 tsp |
Pepper - 1 tsp |
Ginger - 1" |
Garlic - 7 cloves |
Shallots - 1\2 cup |
Coconut - 2 tbsp |
Curry Leaves - 1 stk |
Tomato - 1 no (chopped) |
Turmeric Powder - 1\4 tsp |
Coriander Leaves - 1 tbsp (chopped) |
Oil - 1 tbsp + 1 tbsp |
Salt to Taste. |

Steps To Make The Kaadai Gravy | Quail Gravy Recipe:To make the masala, heat the kadhai and dry roast the cinnamon stick, cloves and star anise. Add the dry red chili and roast it well. Then add the cumin seeds and pepper, roast well and cool the masala completely. Grind them into powder and keep aside. |
In the same kadhai, heat the oil, add the ginger, garlic, shallots, coconut and curry leaves, saute till the shallots turns slightly golden colour. Add the tomato and saute for about two minutes. Cool this mixture and grind with masala (already ground roasted masala) into fine paste, keep aside. |
To make the kaadai | quail gravy, heat the remaining oil in a pressure cooker pan, add the ground masala paste and turmeric powder, mix well for few seconds. Add the kaadai, required salt and mix well. Add a cup of water, mix well and bring to boil. Cover and pressure cook for an 1 whistle and 3 to 5mins over simmer. When all the steam has released, open the pan, add the coriander leaves, mix gently and serve. |
My Notes: Quail | Kaadai cooks fast so don't over cook. To make it richer, use some cashews with the coconut.
