Deepavali | Diwali Special Recipe - Chicken Leg Roast - I tasted this recipe first time at junior kuppanna hotel. It made with few masala, without spices and in our pakka south Indian style. I tried with layered parotta, really the taste is good. You can try this same recipe with country chicken also. I tried to make similar recipe with simple ingredients. Now lets see how to make this chicken leg roast recipe with easy step by step images and instructions. Follow the recipe as below...


Ingredients :

Chicken Leg - 4 no (washed, some deep cut)
Red Chili Powder - 1 tsp
Turmeric Powder - 1\4 tsp
Ginger Garlic Paste - 1 tsp
Shallots | Sambar Onion - 20 no (chopped)
Garlic - 5 cloves (with skin, crushed little)
Dry Red Chili - 3 no
Curry Leaves - 2 stk
Pepper Powder - 1 tsp
Coriander Leaves - 2 tbsp (chopped)
Salt To Taste
Gingelly Oil - 2 to 3 tbsp.

Steps To Make The Chicken Leg Roast:

First to marinate, in a mixing bowl add the chicken leg pieces, red chili powder, turmeric powder, ginger garlic paste and required salt, mix well altogether and marinate for an hour.
Then pressure cook the marinated chicken pieces with half a cup of water for an whistle and three minutes over simmer. When all the steam has released, open the pan and keep aside.

To make the chicken leg roast, heat the oil in a hot kadhai, add the shallots, garlic, dry red chili and curry leaves, saute until the shallots turn slightly golden colour. Add the pressure cooked chicken pieces with its water. Cook over medium flame till the water reduced and turns dry. Add the pepper powder, mix well and cook for an minute. Finally add the coriander leaves, mix well and ready to serve.

My Notes: Cook the chicken till dry like sukka for best taste and texture.
Serving Suggestion: Serve the chicken leg roast with the layered parotta or chicken curry.
