Homemade Jalebi or Jelabi | How To Make Crispy Jalebi | Moru Moru Jelabi | Deepavali Special Recipe - One of my favorite sweet, I tasted this jalebi first time at T.Nagar ranganathan street. Whenever I go T.Nagar, I will never miss the jalebi. Also I tried to make this for 4 to 5 times with many combination of maida and curd, finally I got this perfect recipe. But the shape is not perfect, for that I need more practice and experience. Also the batter consistency and cooking soda is very important for crunchy texture. Now lets see how to make theis jalebi or jelabi recipe with easy step by step images and instructions.

Ingredients :

Maida - 1\2 cup
Curd - 1\4 cup (little sour)
Cooking Soda - 1\4 tsp
Yellow Food Colour - required
Sugar - 1 cup
Rose Essence - 1\4 tsp
Lemon Juice - few drops
Method :

Steps To Make The Jalebi | Jelabi Recipe:

To make the jalebi batter, In a mixing bowl, combine the maida, curd, yellow food colour and cooking soda, mix altogether. Add required water and make little thick batter. Batter consistency is shown in above mixture. Then set the batter for 30 to 45mins.
To make the sugar syrup, heat the sugar and 1\2 cup of water, melt and make sticky consistency. Turn off the flame, add the lemon juice and rose essence, mix well and keep aside.
To make the jalebi, fill the prepared batter in the pipping bag, cut the edge and make small hole.
Heat enough oil in a flat pan or kadhai. Make jalebi on the hot oil, cook over little simmer (not medium) on both side till crispy. Transfer the fried jalebi into the sugar syrup and soak for half an minute. Take out from the syrup and ready to serve.
My Notes: This dish requires little more cooking soda for best texture. Also use flat pan or kadhai to fry the jalebi, than only you can make easily. Batter consistency is also very important.
Serving Suggestion: Serve the jalebi or jelabi with the rabadi.
