Pagarkai Vathal | Bitter Gourd Vathal | Sun Dried Pavakkai Vathal recipe is very to easy to make. Regular intake of pagarkai helps to kill stomach worms. Pagarkai vathal is goes well with sambar rice, kootu rice and curd rice. Fresh pagarkai juice is also helps to lower the blood sugar level. Ingredients :

Pagarkai | Pavakkai | Bitter gourd - 3 no
Turmeric Powder - 1\2 tsp
Salt - 1 tsp

Steps To Make The Pagarkai | Bitter gourd Vathal:

First wash and thinly slice the bitter gourd, keep aside. Heat 1 and 1\2 cup of water, add the turmeric powder and salt, mix well and bring to boil. Then add the sliced bitter gourd and cook for 2 to 3mins or till half cook. Cool the bitter gourd completely.

To dry, drain the water and arrange the bitter gourd on plate. Then sun dry for 3 to 4 days till crispy. Deep fry required vathal in the oil and serve. Store the sun dried vathal in a plastic cover, then store in a box.

My Notes: Sun dry the pagarkai well and store. Else it will forms fungus.
Serving Suggestion: Serve the fried pagarkar vathal with sambar rice.
