Homemade Vada Pav | Bombay Style Special Vada Pav Chat recipe - it is also one of the popular chat in Chennai. It is hot and spicy. But I used normal spicy only, if you like more means, add extra chili or chili powder. This dish is made with our easy available ingredients only, but it flavors and taste is totally different from our south taste. Also I already posted khatta meetha chutney | dates tamarind chutney and green chutney, please refer to make chutney. Now lets see how to make this vada pav chat with easy step by step images and instructions.

For Spicy Masala: |
Peanuts | Groundnut - 2 tbsp |
White Sesame Seeds - 2 tbsp |
Garlic - 2 cloves |
Green Chili - 1 or 2 nos |
Asafoetida - 1\4 tsp |
Grated Coconut - 2 tbsp |
Red Chili Powder - 1\2 tsp |
Cumin Seeds Powder - 1\2 tsp |
Oil - 2 to 3 tsp |
Salt To Taste. |
For Vada: |
Potato - 2 no |
Ginger - 1 inch |
Garlic - 3 no |
Green Chili - 1 no |
Mustard Seeds - 1\4 tsp |
Cumin Seeds - 1 tsp |
Asafoetida - 1\4 tsp |
Coriander Seeds Powder - 1 tsp |
Cumin Seeds Powder - 1\2 tsp |
Turmeric Powder - 1\4 tsp |
Besan Flour | Kadalai Maavu - 1 cup Cooking Soda - 1 pinch |
Oil - 1 tbsp + extra to deep fry |
Salt To Taste. |

Method : |
Steps To Make The Vada Pav:To make the spicy masala, dry roast the peanuts and sesame seeds separately, cool them and grind into powder, keep aside. Then grind the garlic and green chili into paste with some water, keep aside. |
Heat the oil in a kadhai, add the ground garlic-green chili paste and asafoetida, saute for few seconds. Add the coconut, red the red powder, cumin seeds powder and required salt. Stir for about half a minute. Then add the ground peanuts-sesame powder, mix well altogether, remove from the flame and the spicy masala powder is ready. |
To make the vada (potato bonda), pressure cook the potato with one and half cup of water for an whistle and 3 to 5mins over simmer. When all the steam has released, open the pan, cool the potatoes. Then peel off the skin and mash it without lumps, keep aside. Then grind the ginger, garlic and green chili into paste and keep aside. Heat the oil in a kadhai, temper the mustard seeds, then add the asafoetida and cumin seeds, stir for few seconds. Add the ground ingredients and saute for few seconds. Add the coriander seeds powder, cumin seeds powder, turmeric powder and required salt, mix well. Add the mashed potato and mix well, cook for an minute. Remove from the flame and cool the potato mixture. |
Divide the potato mixture into 3" balls and keep aside. Separately mix the besan flour, cooking soda, water and required salt into batter like bajji batter. Dip the potato balls in the besan batter and deep fry in the oil. |
To make the vada pav, take a pav bun and slice into half, open it, apply some green chutney on one side, then apply some dates-tamarind chutney on another side, sprinkle some spicy masala, place the fried vada, close and the vada pav is ready to serve. |
My Notes: Instead of oil, you can also use butter for good flavor. Serving Suggestion: Serve the vada pav with the fried green chili.
