Ingredients :

Butter - 1 tbsp
Maida - 1\4 cup
Red Chili Powder - 1 tsp
Chat Masala - 1\2 tsp
Curry Leaves - 1 stk
Salt To Taste
Oil for deep fry

Steps To Make The Crunchy Masala Balls:

To make the dough, heat 3\4 cup of water in a pan, add the butter and bring to boil. Then add the maida and mix well without lumps. Cook till soft dough consistency. Then cool the dough and make small balls, keep aside.

Separately mix the red chili powder, chat masala and required salt. Heat enough oil in a kadhai and deep fry the balls in a small batches, cook over simmer only until golden colour. Don't stir in between frequently. While hot mix the masala and fried curry leaves together into fried balls, now the crunchy masala balls are ready.

My Notes: Don't stir frequently while deep frying the balls. For beginners, make little thin maida paste with some boiling butter-water and cook as usual to avoid lumps. Also this is the basic recipe to make the cheese balls and chicken cheese balls.
Serving Suggestion: Serve with any sweets.
