Attukari Tawa Kebab | Mutton Tawa Kabab recipe - This kebab is really soft and moist texture, for that hung curd is used to stuff inside the kebab mixture and cooked slowly. Also very simple spices, masalas, fried onion, fried gram, poppy seeds, curd, mint leaves, coriander leaves and simple ingredients only used, along with easy step by step images and instructions. Follow the recipe as below...

Ingredients :

Mutton | Attu Kari - 250 gm to 300 gm
Cinnamon Stick - 2" long
Cloves - 2 no
Cardamom - 2 no
Bay Leaf - 1 no
Fried Gram | Udaitha Kadalai - 1\4 cup
Poppy Seeds - 2 tsp
Red Chili Powder - 1 tsp
Pepper - 1\2 tsp
Turmeric Powder - 1\4 tsp
Onion - 1 no (finely chopped)
Ginger - 1 tsp (finely chopped)
Garlic - 1 tsp (finely chopped)
Egg White - 1 no
Hung Curd - 1\2 cup
Mint Leaves - 2 tbsp
Coriander Leaves - 2 tbsp
Green Chili - 1 no (finely chopped)
Brown Onion - 1 no (sliced)
Oil - required
Salt - required.
Method :

Steps To Make The Mutton Tawa Kebab | Attukari Tawa Kabab:

To make the kebab mixture, dry roast the cinnamon stick, cloves, cardamom and bay leaf, then add the poppy seeds and fried gram, roast well. Then cool the roasted ingredients and grind into powder, keep aside. Then grind the mutton into paste.
In a mixing bowl, add the mutton, red chili powder, pepper powder, turmeric powder and required salt, mix well altogether. Add the ginger, garlic, onion and egg white, mix well. Then add the ground fried gram-spices mixture, mix well and the kebab mixture is ready.
For stuffing, mix the hung curd, mint leaves, coriander leaves and salt in a bowl. To make the kebab, take some mutton mixture, stuff a teaspoon of curd mixture and flat into circle for about one centimeter thickness. Then slowly cook on tawa hot with required oil on both sides and serve hot.
My Notes: Curd mixture helps to turn the mutton kebab into soft and moist. Also use hung curd for stuffing.
Serving Suggestion: Serve with biryani, pulav, chapathi or naan.
