Homemade Schezwan Sauce And Schezwan Chicken and Egg Fried Rice Recipe | Indo-Chinese Cuisine, is made with the chicken, eggs, basmathi rice, tricolor capsicum, carrot, mushroom, chili sauce, soy sauce and simple ingredients. It is little hot and I achieved the restaurant taste. Instead of basmathi rice, you can also use noodles for schezwan chicken and egg noodles. For Schezwan: |
Dry Red Chili - 10 no |
Vinegar - 1 tbsp |
Ginger - 1 tsp (finely chopped) |
Garlic - 1 tsp (finely chopped) |
Soy Sauce - 1 tsp |
Green Chili Sauce - 1 tsp |
Oil - 1 tbsp |
Salt To Taste. |
For Dish: |
Basmathi Rice - 1 cup (soak 30mins) |
Ginger - 1 tsp (finely chopped) |
Garlic - 1 tsp (finely chopped) |
Chicken Breast Strips - 1 cup (2" long) |
Tri Colour Capsicum Strips - 1\2 no |
Carrot Strips - 1 no |
Mushroom Sliced - 1\2 cup |
Egg - 2 no |
Soy Sauce - 1 tsp |
Green Chili Sauce - 1 tsp |
Vinegar - 1 tsp |
White Pepper Powder - 1\2 tsp |
Spring Onion - 2 tbsp (finely chopped) |
Oil - 2 tbsp |
Salt - as required. |
Method : |
Steps To Make The Schezwan Chicken Egg Fried Rice:First cook the basmathi rice with one and half cup of water and required salt. Keep aside.To make the homemade schezwan sauce, heat a cup of water in a pan and add the dry red chili. Slowly cook for about ten minutes and water will reduced almost. Then cool them, grind into paste with vinegar and keep aside. Heat the oil in a pan, add the ginger and garlic, saute till its raw smell leaves completely. Then add the ground chili paste, soy sauce, green chili sauce and required salt. Mix well and cook over simmer till its raw smell leaves completely. Now the schezwan sauce is ready and keep aside. |
To make the schezwan chicken egg fried rice, heat the oil in a kadhai and saute the ginger, garlic. Add the chicken pieces and cook in the oil with required salt. Then add the tri colour capsicum, carrot and mushroom, mix well and cook with some salt. Make a well in the center and make egg podimas with some salt, mix well. After that add the prepared schezwan sauce (fully or required) and mix well altogether. |
Then add the soy sauce, vinegar, green chili sauce and mix well. Add the cooked basmathi rice, mix gently. Finally add the white pepper powder and spring onion, mix gently and ready to serve. |
