Ingredients :

Basmathi Rice - 1 and 1\2 cup
Cinnamon Stick - 2"
Cloves - 3 no
Green Cardamom - 2 no
Black Cardamom - 1 no
Star Anise - 1 no
Bay Leaf - 1no
Sha Jeera - 1\2 tsp
Milk - 1 cup
Dry Ginger Powder | Sukku Podi - 1\2 tsp
Saffron - 1\2 tsp
Sugar - 1 tsp
Cashews - 2 tbsp
Pistachios - 2 tbsp
Walnuts - 2 tbsp
Raisins - 2 tbsp
Pineapple - 2 thin slices
Strawberry - 2 to 3 no
Kiwi - 1 no
Apple - 1\2 no
Seedless Black Grapes - 1\4 cup
Mint Leaves - 2 tbsp
Coriander Leaves - 2 tbsp
Ghee or Butter - 2 tbsp + 2 tbsp
Salt To taste.
Method :

Steps To Make The Kashmiri Pulao:

Soak the basmathi rice for thirty minutes. To make the pulao, heat the ghee or butter in a pressure cooking pan, roast the cinnamon stick, cloves, green cardamom, black cardamom, star anise, bay leaf and sha jeera. Add the soaked basmathi rice and stir for an minute. Then add the milk, 1 and 1\4 cup of water, dry ginger powder, sugar, saffron and required salt. Mix well and bring to boil. Then pressure cook for an whistle and three minutes over simmer. Meantime cut all the fruits into small pieces and keep aside.
To make the fruits and nuts mixture, heat the remaining ghee or butter in a kadhai and roast the cashews, pista, walnut and raisins. Add the fruits and cook till soft. Then when all the steam has released from the pressure cooker pan means, open the pan, mix gently, add the mint leaves, coriander leaves and cooked fruits. Mix gently and dum for five minutes over simmer. Now the kashmiri pulao is ready and serve hot.
My Notes: If the fruits are contains less sweet means add some sugar and cook.
Serving Suggestion: Serve the kashmiri pulao with mutton gravy.
