Schezwan Fried Eggs | Schezwan Fried Egg With Easy Homemade Schezwan Sauce - fried hard boiled eggs, sauteed with capsicum, homemade schezwan sauce and simple ingredients. Veg it by using paneer, soya chunk or mushroom. It is very easy to make. Homemade schezwan sauce is very useful to make most of the recipes like schezwan fried rice, schezwan chicken, schezwan soup and many more. Now lets see how to make this schezwan fried eggs with step by step images and instructions.

For Schezwan Sauce:

Dry Red Chili - 10 no
Vinegar - 1 tbsp
Ginger - 1 tsp (finely chopped)
Garlic - 1 tsp (finely chopped)
Soy Sauce - 1 tsp
Green Chili Sauce - 1 tsp
Oil - 1 tbsp
Salt To Taste.

For Dish:

Eggs - 4 no + 1 no
Maida - 2 tbsp
Corn Flour - 2 tbsp
White Pepper Powder - 1 tsp
Ginger - 1 tsp (finely chopped)
Garlic - 1 tsp (finely chopped)
Tri Colour Capsicum - 1\2 no Each (square cut)
Soy Sauce - 1 tsp
Green Chili Sauce - 1 tsp
Chili Vinegar - 1 tsp
Salt - required
Spring Onion - 2 tbsp (finely chopped)
Oil - 2 tbsp

Steps To Make The Schezwan Sauce:

Heat a cup of water, add in the dry red chili and slowly cook for about ten minutes and water will reduced almost. Then cool and grind into paste with vinegar and keep aside. To make the schezwan sauce, heat the oil in a pan, add the ginger and garlic, saute till its raw smell leaves. Add in the ground red chili paste, soy sauce, green chili sauce and required salt. Mix well and cook over simmer till its raw smell leaves completely. Now the schezwan sauce is ready and keep aside.

Steps To Make The Schezwan Fried Eggs:

To cook the eggs, In a bowl, add 4 eggs, required water and some crystal salt. Then heat and boil for 5 mins ( + or -), then cool and remove the outer shell. Slice the eggs into 4 parts and keep aside. To make the batter to fry the eggs, add the maida, cornflour, white pepper powder, one egg and required salt in a mixing bowl. Then add required water and make little thick batter. Dip the sliced egg in the batter and deep fry in the oil, till slightly golden colour and keep aside.

To make the schezwan fried eggs, heat the oil in a kadhai, add the ginger and garlic, saute till its raw smell leaves completely. Add the tri colour capsicum and saute till soft. Then add two to three tablespoon of prepared schezwan sauce, soy sauce, green chili sauce and required salt, saute for few seconds. Add the fried eggs and mix gently. Finally add the spring onion and the schezwan fried eggs ready.

My Notes: Carefully deep fry the eggs, because sometime it will sprinkle oil.
Serving Suggestion: Serve the schezwan fried eggs with the fried rice.
