For Bourbon Biscuits: |
Maida - 100 gm |
Cocoa Powder - 20 gm |
Baking Powder - 1\2 tsp |
Cooking Soda - 1\4 tsp |
Unsalted Butter - 50 gm |
Powdered Sugar - 50 gm |
Honey or Golden Syrup - 2 tbsp ( I used honey ) |
Vanilla Essence - 1 tsp |
Milk - as required |
Ordinary Crystal Sugar - as required to sprinkle |
For Cocoa Butter Cream: |
Icing Sugar - 150 gm |
Unsalted Butter - 50 gm |
Cocoa Powder - 20 gm |
Vanilla Essence - 1 tsp |
Milk - as required |
Method : |
Preparations, sieve the maida, cocoa powder, baking powder and cooking soda for two to three times. Grease the baking tray with butter. |
To make the bourbon biscuits dough, cream the butter and powdered sugar with an electric beater. Add the honey and vanilla essence, beat till combined. Add required milk and make soft dough. |
Roll out the bourbon biscuit dough with half centimeter thickness. Cut into two inch long and one inch width. Using fork, make some holes on the dough. Carefully place them on the greased tray and sprinkle some crystal sugar on top. |
To bake, pre-heat the oven at 180 degree Celsius, bake for ten to twelve minutes. |
Cool the biscuits on rack. |
To make the cocoa butter cream, In a mixing bowl, add the icing sugar, butter, cocoa powder and vanilla essence. Beat this mixture till creamy with required milk. |
Sand witch the biscuits with the cocoa butter cream and ready. |
Notes: Bake the biscuits at pre-heated oven. Once baked, it looks soft and it will turn crunchy once cooled. Store the biscuits in a air-tight container box. |

Preparations, sieve the maida, baking powder, cooking soda and cocoa powder for 2 to 3 times, keep aside. Grease the baking tray with some butter and keep aside. |
To make the bourbon biscuits dough, take a mixing bowl, add the butter and powdered sugar, beat with an electric beater till creamy. |
Add the honey and vanilla essence, beat till combined. |
Then add the sieve flour mixture and mix into soft dough with required milk. Now the bourbon biscuits dough is ready. |
Roll out the dough for about half centimeter thickness with flour. Cut the dough into rectangle biscuits for one inch width and two inch long. Using fork, make holes on the biscuits. |
Transfer the biscuits into the baking tray and sprinkle some crystal some on top. Bake for 10 to 12mins at pre-heated oven. Cool the biscuits on rack. |

Take a mixing bowl, add the butter, icing sugar and cocoa powder, mix little and beat with an electric beater till cream with required milk. |
Sand witch the cookies with the prepared cocoa butter cream. Store in a air-tight box. |
