Mango Cheese Cake | No Bake Mango Cheese Cake With Paneer - This is one of my favorite cheese cake. I used alphonso mangoes and homemade paneer. It is creamy, soft and melts in mouth. Follow the recipe with step by step images, instructions and video.

Mango Cheese Cake | No Bake Mango Cheese Cake With Paneer


Prep Time: 45 minutes + chilling
Cook time: 2 minutes (to melt gelatine)

Ingredients :

For The Crust:

Digestive biscuits - 200gm
Unsalted Butter - 50 gm

For The Filling:

Mango - 1 cup (alphonsa, small pieces)
Paneer - 200gm (homemade fresh paneer)
Condensed Milk - 3\4 cup
Gelatin - 3 tbsp (unflavored)
Whipping Cream - 3\4 cup

For The Top:

Mango Puree - 1 cup (alphonsa)
Lemon Juice - 1 no
Gelatin - 1 tbsp
Method :
For the crust, crumble the digestive biscuit. Heat the butter in a sauce pan and add the biscuit crumbs. Mix well and remove from the flame. Take a 9" round spring form cake tin, layer the biscuit mixture evenly at bottom with the back of a spoon and keep aside.
For the filling, grind the mango, paneer and condensed milk into creamy, keep aside.
In a glass bowl, add the gelatin and 1\4 cup of water, leave for 5mins, then microwave for an minute or until the gelatin dissolves completely. Set aside to cool.
Beat the whipping cream with an electric beater until the peaks form. Add the mango-paneer mixture and dissolved gelatine mixture into the whipped cream and mix well altogether with a spatula. (don't beat with an electric beater)
Add the mango-cream mixture on the biscuit layered tin and keep aside.
For the top layer, in a glass bowl, add the remaining gelatine and 2 tbsp of water, set aside for 5mins. Then microwave for 1 minute or until the geltine dissolves completely and cool them.
Mix the mango puree, lemon juice and gelatin mixture.
Add the mango-gelatin mixture on the top and spread evenly with the back of spoon. Cover and refrigerate them for 4 to 6 hours or overnight to set.
To de mold, carefully run the knife at the side, remove from the mould and the mango cheese cake is ready.
