Samba Gothumai | Samba Wheat - 1 cup |
Sugar - 1 and 3\4 cup to 2 cup |
Sugar For Caramel - 1\2 cup |
Ghee - 1 cup |
Cashews - 50 gm |
Method : |
Preparation, To make the samba wheat milk, wash and soak the samba wheat for 8 hrs or overnight. Drain the water and grind the samba wheat into paste with 2 cups of water, using metal strainer, take out the milk. Again grind the solids and take the milk with 3 cups of water. (totally 5 cups of water) |
Set the samba wheat milk for 8hrs or overnight to soar. Pour out the floating thin milk and we need only thick milk. |
To make the halwa, heat the prepared thick milk and 4 cups of water in a heavy bottom kadhai. Cook over medium-lower flame and keep stirring continuously to avoid lumps. When the halwa mixtures starts bubbles, add the sugar and keep stirring. |
Separately, caramel the remaining sugar until golden brown colour. Add the caramel into the halwa mixture and mix well. |
Add the ghee little by little and keep stirring. Separately ghee roast the cashews and add them into the halwa mixture. |
When the halwa mixture doesn't stick on the kadhai and turns glossy means its ready. |
Turn off the flame and transfer the halwa into ghee greased bowl and serve. |
Notes: Use heavy bottom kadhai. Don't use regular wheat. |
