Ingredients : |
Maida | Flour - 100gm |
Baking Powder - 1\2 tsp |
Cooking Soda - 1\4 tsp |
Unsalted Butter - 80 to 100 gm (room temperature) |
Demerara Sugar - 60 gm |
Eggs - 2 nos (room temperature) |
Butterscotch Essence - 1\2 tsp |
Vanilla Essence - 1\4 tsp |
Compound White Chocolate - 50 gm (roughly chopped, room temperature) |
Method : |
Preparations, grease and dust the 6" baking tin with butter and maida, keep aside. Sieve the maida, baking powder and cooking soda for 2 to 3 times and keep aside. |
Preheat the oven to 180 degree Celsius at convection mode. |
To make the cake batter, grind the sugar and butter in a mixie until blend. Add in the eggs, butterscotch essence and vanilla essence. Grind for around one minute at speed 2 or until the sugar dissolved and mixed well. Transfer the ground sugar-egg mixture into the mixing bowl, add the sieved flour mixture and gently fold in. |
Take the prepared baking tin, add in half of the cake batter, spread evenly, add the compound white chocolate, then add the remaining cake batter, tap the tin gently on flat surface to spread the batter evenly all sides. |
Bake for 18mins or until the top turns slightly golden colour. |
To demold, cool the cake in the tin. Run the knife at the sides and insert on plate. Serve chill or warm. |
Notes: Instead of mixie, you can also use electric beater or whisk. Use all the ingredients at room temperature. |
