It's available easily everywhere. It's rich in dietary fiber, protein and also low in fat. I used thinai arisi with the main ingredients of pachai arisi maavu, ulundu maavu and butter. Thinai Arisi Murukku | Deepavali Special Siru Thaniyam Murukku | Foxtail Millet Murukku

Ingredients :

Thinai Arisi | Foxtail Millet - 1 cup
Salt - as required
Karuppu Ellu | Black Sesame - 1 tsp
Jeeragam | Cumin Seeds - 1 tsp
Perungayam | Asafoetida - 1\4 tsp
Butter - 1 tsp heaped
Pachai Arisi Maavu | Rice Flour - 1\2 cup
Ulundu Maavu | Urad Dal Flour - 1\2 cup
Water - required
Oil - deep fry
Method :
Wash and soak the thinai arisi for about two hours.
Drain the water fully and grind the soaked thinai into paste with required water.
To make the thinai murukku dough, in a mixing bowl, add the ground thinai paste, sesame seeds, cumin seeds, asafoetida, butter, rice flour and urad dal flour, mix well altogether. Then add required water and knead into soft dough.
To make the thinai murukku, grease the murukku maker with three hole disc and fill the required dough. Make murukku and deep fry over medium flame. Cook on both sides until golden brown colour.
Notes: Make soft murukku dough. Fry 4 to 5 murukku at a time to maintain the oil temperature and to cook evenly. Cool the murukku up to room temperature and store in a air tight box up to a week.

Transfer the ground thinai mixture in a mixing bowl.

Mix well altogether. Then add the required water and knead into soft dough.

Make murukku on greased laddle or plate. Drop in the hot oil carefully.

Deep fry over medium flame. Cook on both sides until golden brown colour.

Serving Suggestion: Serve the murukku with the gulab jamuns.
