Cook time: 30 minutes (2 batches)
Recipe Cuisine: World
Recipe Category: Biscuits, Short bread
Yield: 14 Biscuits

Ingredients :

Almonds | Badam - 50 gm
Maida | Flour - 100 gm
Soda Bi Carbonate - 1\8 tsp (cooking soda)
Unsalted Butter - 50 gm
Demerara Sugar - 50 gm (powdered)
Method :
Preparations, soak the almonds in the hot water for about thirty minutes. Peel off the outer skin and grind little coarsely, set aside. Sift the maida and cooking soda for two times and set aside.
To make the almond biscuits dough, In a mixing bowl, add the butter and powdered demerara sugar, mix well until creamy. Add in the ground almonds and mix well altogether. Add in the sifted flour and mix well. Consistency of the dough is soft and crumbly.
Preheat the oven to 180 degree Celsius. Grease the baking tray with some butter or line with parchment paper.
Take a tablespoon of dough, form in to ball and press into small disc about quarter inch thickness. Arrange the biscuits on the greased baking tray, leaving some space between each biscuit.
Bake for fifteen minutes (+ or -) or until golden colour. Cool the biscuits in the baking tray for five minutes and then place on rack and cool completely.
Notes: Don't over grind the blanched almonds. Don't add water into the biscuit dough, if the dough is too crumble, add extra butter. While hot biscuits will break easily, so cool little in the tray and then transfer on rack and cool completely. Pack the biscuits with plastic cover and then store in a air tight box.

Variation: Instead of demerara sugar, you can also use normal white sugar and icing sugar. But demerara sugar tastes better.
