Ingredients : |
Unsalted Butter - 100 gm (room temperature) |
Brown Sugar - 3\4 cup |
Fresh Jackfruit - 1\2 cup (finely chopped) |
Fresh Cream - 1\4 cup |
Wheat Flour - 1 cup (plain) |
Baking Powder - 1\2 tsp |
Cooking Soda - 1\4 tsp |
Eggs - 3 nos |
Method : |
In a pan, add the butter and brown sugar, heat and mix well. When the butter melts, add the jackfruit, turn the flame into simmer and cook for one minute. In this mixture, keep 1\4 cup separately and cool the remaining. |
To make the jackfruit cream sauce, mix 1\4 cup of reserved jackfruit-butter mixture and fresh cream, keep aside. |
Preparation, Sieve the wheat flour, baking powder and cooking soda, keep aside. Grease a 6" baking tin with some butter, dust with wheat flour and keep aside. Pre-heat the oven to 180 degree Celsius at convectional mode. |
To make the cake batter, in a mixing bowl, add the eggs and cooled jackfruit-butter mixture. Using electric beater, beat for one minute. Add in the sieved wheat flour mixture, using spatula, gently fold in. |
To Bake, transfer the cake batter into a prepared tin, bake for 25mins (+ or -). |
Test the cake by inserting a knife in the center, it should comes out clean. Else bake for another 5mins (+ or -). |
Cool the cake in the tin for 5 to 10mins. Run the knife around the sides and cut into required size. Add the jackfruit cream sauce and allow to absorb 5 to 10mins. Take out the pieces carefully and ready. |
Notes: Instead of wheat flour, can also use maida. Similarly for brown sugar, can also use normal sugar. If the cake batter is too thick, add some milk and mix. Use all the ingredients at room temperature only. |
