Nei Saadham | Ghee Rice | How To Make Simple Ghee Rice With Spices - made with the fresh spices, ghee (clarified butter) and basmathi rice. It is one of the popular rice variety in India. Ingredients :

Basmathi Rice - 2 cups
Ghee - 2 tbsp
Cinnamon Stick - 2" long
Cardamoms - 3 nos
Star Anise - 1 no
Bay Leaves - 2 nos
Cloves - 5 nos
Large Onion - 1 no (sliced)
Coriander Leaves - 2 tbsp (finely chopped)
Mint Leaves - 2 tbsp (finely chopped)
Salt - required.
Method :
Preparation, wash and soak the basmathi rice for about thirty minutes with enough water. Drain the water and keep aside.
To make the ghee rice, heat the ghee in a pressure cooker pan, add the cinnamon stick, cardamoms, star anise, bay leaves, cloves and onion. Saute until the onion turns golden colour. Add the coriander leaves and mint leaves, mix well and stir for few seconds. Add the soaked basmathi rice and mix well. Then add three cups of water and required salt, mix well.
Close the lid with whistle, cook for one whistle over high flame and three to five minutes over low flame. When the steam has released, open the pan. Gently mix altogether and ready.
Notes: Always open the pressure cooker pan, after the steam has released fully.
