Ulundu | Urad Dal - 1\2 cup |
Garlic - 10 cloves |
Dry Red Chilies - 3 to 4 nos |
Cumin Seeds - 1 tsp |
Sambar Onion - 2 cups (finely chopped) |
Salt - as required |
Method : |
Wash and soak the ulundu for about 1 hr. Drain the water. Grind into fine paste with required salt and water into vadai batter consistency. |
Grind the garlic, dry red chilies and cumin seeds into coarsely. |
Mix the ulundu batter and ground masala. Then add in the sambar onion and mix well. |
Make vadagam on clean and dry cloth. Sun dry them for three to four days or till them dry completely. Vadagam is ready. |
To fry, heat some oil in a kadhai, fry ten to fifteen vadagams at a time, cook over simmer only until golden brown colour. |
Notes: At night, keep the vadagam in the house and store the dried vadagam in a air-tight box. Fry the vadagam in small batches and cook over simmer only. |
