For Cup Cakes: |
Sprouted Kelvaragu | Ragi Flour - 3\4 cup |
Cocoa Powder - 1\4 cup |
Baking Powder - 1\2 tsp |
Cooking Soda - 1\4 tsp |
Unsalted Butter - 50 gms (room temp) |
Brown Sugar - 1\2 cup |
Eggs - 3 nos |
Vanilla Essence - 1 tsp |
For Cocoa Butter Icing: |
Unsalted Butter - 50 gms (room temp) |
Icing Sugar - 150 gms |
Cocoa Powder - 40 to 50 gms |
Milk - as required |
Salt - generous pinch |
Others: |
Cup cake mould - 2" diameter and 1" depth |
Cup cake liners |
Sugar Sprinkles to decorate. |
Method : |
Preparations, sift the sprouted kelvaragu flour, cocoa powder, baking powder and cooking soda, keep aside. Preheat the oven to 180 degree Celsius at convectional mode. |
To make the cup cake batter, using electric beater or hand whisk, beat the butter and brown sugar until creamy in a mixing bowl. Beat in the eggs, one at a time. Add the vanilla essence and mix well. Add the sifted flour mixture and fold in gently. (if the batter is too thick, add some milk) |
To bake, line the cup cake moulds with paper cups liner. Fill the half of the batter in each cups. Gently tap the mould on flat surface to spread the batter evenly on all sides. Bake for 16 to 18 mins. |
To test, insert the knife in the center of cup cake, it should comes out clean, else bake for extra 3 to 5mins. |
Cool the cup cakes in the rack. |
For the icing, mix the butter, icing sugar, cocoa powder and salt in a mixing bowl, then add required milk and beat into creamy. |
Fill the butter icing in to the pipping bag with star nozzle. Make simple swirl design and decorate with sugar sprinkles. Cup cakes are ready. |
Notes: Depend on the cup cake sizes, its baking time will vary. Once baked, cool the cup cakes fully and then make icing on them to avoid melting. |
