Ingredients : |
Cinnamon Stick - 2 " long |
Bay Leaves - 2 nos |
Dry Red Chilies - 3 nos |
Coriander Seeds - 2 tbsp |
Pepper - 1 tsp |
Fennel Seeds - 1 tsp |
Sha Jeera - 1 tsp |
Star Anises - 2 nos |
Green Cardamoms - 5 nos |
Black Cardamoms - 2 nos |
Nutmeg - 1\4 no (slightly crushed) |
Kalpasi - 1\2 tsp |
Nutmeg Flower - 1 no (optional) |
Method : |
Dry roast all the ingredient except kalpasi in a kadhai over low flame. When the fennel seeds and sha jeera starts crackle, turn off the flame. After that add the kalpasi, mix well and cool the masala's mixture completely. |
Grind the masala in to fine powder. Sieve and store in a container box. Use as required to make biryani. |
Notes: Don't over roast the spices. Roast the spice over low flame. Add the kalpasi at last to avoid burnt. |
