Brown Sugar - 1 cup |
Mango Paste - 1\2 cup |
Mango Pieces - 1\2 cup (1" cut) |
Milk - 1\2 cup |
Fresh Cream - 250 ml |
Egg Yolks - 3 nos |
Vanilla Essence - 1 tsp |
Method : |
Heat a pan, add the brown sugar, mango paste, mango pieces and milk. Cook for about 2 minutes over medium flame and keep aside. |
Heat another pan with fresh cream, let it come to a boil, slowly add the beaten egg yolks and stir continuously to avoid lumps. Add the vanilla essence, mix well, when the mixture starts boiling, add the mango-sugar mixture, mix and stir constantly. Cook for about five minutes, until the mixture can hold a line drawn on the back of the spoon. |
Cool and fill the ice cream molds, freeze overnight or at least 6 hrs. |
Notes: While cooking, if the fresh cream and yolks mixture turned thick with lumps, grind into paste and use them. |

To de mold, dip the ice cream mold in the water for few seconds and pull out. |
