Maida - 1 and 1\2 cups |
Baking Powder - 3\4 tsp |
Cooking Soda - 1\3 tsp |
Orange - 2 nos |
Sugar - 3\4 cup to 1 cup |
Eggs - 5 nos |
Orange Zest - 2 tsps |
Melted Unsalted Butter - 100 gms |
Vanilla Essence - 1 tsp |
Method : |
Preheat the oven to 180 degree Celsius at convectional mode. |
Sieve the dry ingredients of maida, baking powder and cooking soda, keep aside. |
Peel off the oranges skin and cut into small pieces. Heat the sugar and orange in a pan, cook over simmer for about five minutes or until it turns tender, by stirring frequently. Cool them and keep aside. |
To make the orange cupcakes batter, using electric beater, beat the eggs, orange zest, melted butter and vanilla essence for about one minute, in a mixing bowl. Add the orange-sugar mixture and mix well. Then add the sieved flour mixture and gently fold in, until it combines and batter is ready. |
Line the cupcakes mould with paper cups liner and fill half of the batter. Bake for 16 to 18 mins. |
Test the cupcakes by inserting a tooth pick in the center, it should comes out clean. Cool the cupcakes in the rack. |
Decorate with sugar sprinkles and ready. |
Notes: Use all the ingredients at room temperature. To bake, just fill 1\2 or 2\3 batter in cupcakes to avoid over rising. These cupcakes will last for 1 or 2 days at room temperature and refrigerate up to 2 to 3 days. |
