In this recipe, Fresh fruits are added. Made with the main ingredients of milk, cornflour and fruits. Tricolour Kulfi | Homemade Tricolour Kulfi Made With Orange Banana And Kiwi

Ingredients :

For Orange Kulfi's

Orange Juice - 1 cup
Milk - 1 cup
Brown Sugar - 1\3 cup
Milk Powder - 1 tbsp
Orange Zest - 1 tsp
Cornflour - 1 tsp

For Banana Kulfi's:

Milk - 1 cup
Condensed Milk - 1\3 cup
Fresh Cream - 1\4 cup
Cornflour - 1 tsp
Banana - 1\2 cup (chopped)

For Kiwi Kulfi's:

Milk - 1 cup
Brown sugar - 1\3 cup
Milk Powder - 1 tbsp
Cornflour - 1 tsp
Kiwi Paste - 1\2 cup

Bamboo or Ice Cream Sticks
Method :

To Make The Orange Kulfi Mixture:

Heat the orange juice in the pan until it reduced into 1\4 of the quantity. Keep aside.
Heat the milk, brown sugar, milk powder and orange zest, bring to boil and turn the flame into simmer. Mix the cornflour with 2 to 3 tbsps of water, add it into the simmering milk mixture. Stir for two to three minutes until thick. Add the reduced orange juice, mix and turn off the flame. Keep aside and cool them.

To Make The Banana Kulfi Mixture:

Heat the milk, condensed milk and fresh cream in a pan. Bring to boil and turn the flame into simmer. Separately mix the cornflour with 2 to 3 tbsps of water, add it into the simmering milk mixture. Stir for two to three minutes until thick. Add the chopped bananas, mix and turn off the flame. Keep aside and cool them.

To Make The Kiwi Kulfi Mixture:

Heat the milk, brown sugar and milk powder in a pan. Bring to boil and turn the flame into simmer. Separately mix the cornflour with 2 to 3 tbsps of water, add it into the simmering milk mixture. Stir for two to three minutes until thick. Add the kiwi fruit paste, mix and turn off the flame. Keep aside and cool them.

To Set the Kulfi's In the Mould & De Mould :

First pour 1\3 quantity of orange kulfi mixture in each kulfi moulds and freeze for an hour until firm to touch. Then pour some banana kulfi mixture on them and again freeze for an hour until firm to touch. At last fill the kiwi kulfi mixture and freeze for about three to four hours.
To Demould, insert the bamboo stick or ice cream stick in the center, run the knife around the sides and pull out the stick. Kulfi's are ready.
Notes: For the orange kulfi's, orange zest may curdle the milk sometimes, so you can also add with reduced orange juice.
