Ingredients : |
Sugar - 3\4 cup to 1 cup |
Water - 1\2 cup |
Cardamom Powder - 1\2 tsp |
Yellow Food Colour - few drops |
Lemon Juice - few drops |
Besan Flour - 1 cup |
Salt - generous pinch |
Water - approx 3\4 cup (+ or -) |
Ghee - 1 tsp |
Method : |
Heat the water and sugar in a pan, boil for about two minutes. Turn off the flame. Stir in the cardamom powder, yellow food and few drops of lemon juice. Keep aside. |
To make the boondi batter, mix the besan flour and salt in a bowl. Stir in the required water in a bajji batter consistency (little watery consistency). |
Heat enough oil in a kadai, hold a boondi ladle or jalli karandi few inches above the oil in one hand, with the other hand, pour some boondi batter on the ladle, so its drops into the oil as small pearls. Fry them (not too crispy) and keep aside. (For the each time, rinse and dry the boondi ladle, so that the boondi batter can easily pass through the holes). |
Heat the prepared sugar syrup, bring to boil. Stir in the ghee. Add the fried boondi's, mix and cook until the syrup water reduced into sticky consistency. Remove from the flame. Allow to cool completely by stirring frequently. Boondi's are ready. |
Notes: For the each time, rinse and dry the boondi ladle or jalli karandi, so that the boondi batter can easily pass through the holes. |
