Kelvaragu | Ragi - 1 cup |
Coconut - 1 cup (chopped) |
Water - 4 cups |
Jaggery - 1 and 1\2 cups |
Water - 1\4 cup |
Ghee - 2 tbsps + 2 tbsps |
Cashews - 2 tbsps |
Cardamom Powder - 3 to 5 nos |
Salt - pinch |
Method : |
Preparations, wash and soak the ragi overnight. |
Grind the ragi and coconut with 4 cups of water. Strain the milk and discard the solids. |
Make jaggery syrup with 1\4 cup of water, keep aside. |
To make the halwa, heat the ghee in a heavy kadhai, roast the cashews and keep aside. Add the ragi-coconut milk and pinch of salt, mix well and cook over medium-lower flame by stirring continuously. Halwa mixture gets thicken little by little. When the mixture reduced into half of its quantity or reached halwa consistency, add the cardamom powder, roasted cashews and remaining ghee. Mix well and the halwa is ready. |
Notes: Keep stirring continuously to avoid lumps. Pinch of salt helps to enhance the sweetness. When the halwa got cool, it will turn into thick. Serve hot. For best taste, steam, microwave or double boil the halwa and serve hot. |
