Mutton Sukka | Mutton Masala Sukka With Freshly Roasted Masala

Ingredients :

Dry Red Chilies - 3 nos
Cinnamon Stick - 2" long
Cloves - 3 nos
Mace - 1\2 no
Coriander Seeds - 1 tsp
Cumin Seeds - 1\2 tsp
Whole Pepper - 1 tsp
Nutmeg - 1\4 tsp
Gingelly Oil - 2 tbsps
Sambar Onion - 3\4 cup to 1 cup (chopped)
Curry Leaves - 2 stks
Ginger Garlic Paste - 1 tbsp
Boneless Mutton - 350 gms (small pieces)
Turmeric Powder - 1\2 tsp
Water - 1 cup
Salt - as required
Method :
Dry roast the dry red chilies, cinnamon stick, cloves, mace, coriander seeds, cumin seeds, whole pepper and nutmeg. Grind into powder and keep aside.
Heat the oil in a pressure cooker pan, add the sambar onion and curry leaves, saute until its turn slightly golden colour. Add the ginger garlic paste, saute until its raw smell leaves. Add the mutton, turmeric powder and salt, cook for about two to three minutes. Add the water, mix well.
Cook for one whistle over high flame and twenty minutes (+ or -) over low flame.
When all the steam has released, open the pan. Add the prepared masala. Cook until the mutton mixture turns into dry. Serve hot.
Notes: Always open the pan, after the steam fully released. Mutton cooking is depend on size.
