Millet Cookies - Thinai Butter Cookies With Coconut And Coconut Sugar - Foxtail Millet Cookies - 2 in 1 Millet Cookies - Plain Coconut Cookies And Chocolate Coconut Cookies - Delicious homemade thinai cookies - Its buttery, crunchy, light as well as tasty. For the chocolate cookies, add quarter cup of coco powder,  quarter cup of chocolate chips and teaspoon of vanilla essence. Instead of thinai, we can also use kambu flour, wheat flour or any other millet flours. Follow the recipe below with easy step by step images, instructions and video.

Thinai Butter Cookies With Coconut And Coconut Sugar

Bake time: 13 to 15 minutes (each batch)

Ingredients :

Thinai Maavu | Foxtail Millet Flour - 1 cup
Baking Powder - 1\4 tsp
Cooking Soda - 1\8 tsp
Coconut Sugar - 1\2 cup (or brown sugar)
Green Cardamoms - 5 nos
Milk Powder - 1 or 2 tbsps
Unsalted Butter - 60 gms (room temperature)
Freshly Grated Coconut - 1\2 cup
Method :
Preparations, sieve the thinai maavu, baking powder and cooking soda. Grind the coconut sugar, green cardamoms and milk power into powder.
Preheat the oven to 180 degree Celsius at convectional mode. Grease the baking tray or line with parchment paper.
To make the millet cookies dough, cream the butter and ground sugar mixture in a mixing bowl.
Add the sieved flour mixture and mix well. Then add the grated coconut and mix into a soft dough, if required add some milk.
Shape tablespoons of the dough into balls and place on the prepared baking tray, spacing about two inches apart. Flat into circle for about half centimeter thickness by using fork.
Bake for about 13 to 15 minutes, until lightly golden.
Cool on the baking tray until the cookies firm slightly. Transfer to racks and let cool completely.
Store in a air-tight box.
Notes: Use all the ingredients at room temperature. To protect the cookies flavor and drying out, tightly wrap with cover and store in a air-tight box or refrigerate them.

Serving Suggestion: Sandwitch the cookies with ice cream or cream.
