Ingredients : |
Garlic - 4 cloves |
Green Chili - 1 no |
Boiled and Mashed Potato - 1\2 cup |
Salt - as needed |
Maida - 1\4 cup |
Rice Flour - 1\8 cup |
Coriander Leaves - 2 tbsps (finely chopped) |
Mozzaralla Cheese |
Cornflour - 2 tbsps |
Bread Crumbs - 1\2 cup |
Oil for shallow fry |
Method : |
First grind the garlic and green chili into paste with little water. |
In a mixing bowl, add the mashed potato, ground garlic-chili paste and salt, mix well and ensure there will be no lumps. Now add the maida, rice flour and coriander leaves, mix into dough consistency. |
Let it rest for about thirty minutes. |
Then Mix the cornflour and 2 to 3 tbsps of water in a bowl, into a smooth flowing consistency battery. |
Divide the potato dough into two parts. |
Roll out the dough into circle and cut into four triangles. |
Take one triangle dough, place the mozzarella cheese in the center and fold the dough into triangle shape. |
Dip in the cornflour batter and ensure covering all sides. |
Then roll in bread crumbs and gently press all sides to stick well. |
Deep fry or shallow fry in the hot oil. Flip and fry on both sides on medium flame until it turns nice golden colour and crisp. |
Finally drain over kitchen paper to remove excess oil and serve hot with mayo. |
Notes: Use grated or mashed potato to avoid lumps. If the dough is sticky, add maida and rice flour. Rice flour is used for extra crisp. |
