Roasted Thol Ulundu Maavu \ Black Urad Dal Flour - 1/2 cup (ie., with skin)
Thinai Arisi Maavu \ Foxtail Flour - 1/2 cup (or Idly Rice Flour )
Karuppatti \ Palm Jaggery - 1/2 cup (crushed)
Gingelly Oil \ Nal Ennai \ Sesame Oil - 1/4 cup
To make the homemade thol ulundu maavu \ black urad dal flour :
- dry roast the thol ulundu \ whole black urad dal in a heavy bottom kadhai til its aroma rise well, then allow to cool completely and grind into fine powder. Store in air-tight box and use required. |
Steps To Make The Ulundu Kali \ Ulunthan Gali Recipe :
- Make the palm jaggery syrup with two cup of water. (Image 1)
- Dissolve the ulundu maavu and arisi maavu with the 2 cups of water without lumps. (Image 2)
- To make the ulundu kali, filter the prepared palm jaggery syup in a heavy bottom kadhai and bring to boil. (Image 3)
- Add in the prepared ulundu maavu and arisi maavu mixture, mix well without lumps. (Image 4 and 5)

- Cook for about 10mins (+ or -) over medium flame by stirring continuously, also making sure that it doesn't get burnt (Image 6)
- Finally add in the gingelly oil, mix altogether and cook for 2more minutes, remove from the flame and ready to serve. (Image 7 and 8)
