Ingredients :

Butterbeans - 1 cup
Basmathi Rice - 1 and 1\2 cup
Cinnamon Stick - 2" long
Cloves - 5 no
Cardamon - 3 nos
Star Anise - 1 no
Bay Leaves - 2 no
Fennel Seeds - 1 tsp
Onion - 1 no (thinly sliced)
Curry Leaves - 2 stk
Crushed Ginger Garlic - 1 tbsp
Tomato - 2 no
Green Chili - 3 nos
Red Chili Powder - 1 tsp
Turmeric Powder - 1\4 tsp
Coriander Leaves - 1\4 cup
Mint Leaves - 1\4 cup
Coconut Milk - 1 cup
Ghee - 2 tbsp
Oil - 1 tbsp
Salt to Taste.

Method :

Steps To Make The Butterbeans Brinji | Briyani :

  • First soak the basmathi rice for 15mins with enough water. (Image 1)
  • To make the brinji | briyani, heat the ghee and oil in a pressure cooker pan, roast the cinnamon stick, cloves, cardamom, star anise, bay leaves and fennel seeds. (Image 2)
  • Add the onion and curry leaves, saute until the onion turns slightly golden colour. (Image 3)
  • Add the crushed ginger garlic and saute until its raw smell leaves completely. (Image 4)
  • Add the tomato and green chili, saute until the tomato cooks fully. (Image 5)
  • Add the red chili powder and turmeric powder, stir well for few seconds. (Image 6)

  • Add the coriander leaves and mint leaves, saute for few seconds. (Image 7)
  • Add the butter beans and mix well for few seconds. (Image 8)
  • Add the soaked basmathi rice and mix gently. (Image 9)
  • Add the coconut milk and 1 and 1\2 cup of water, mix well and bring to boil. (Image 10)
  • Cover and pressure cook for an 1 whistle and 3 to 5mins over simmer. When all the steam has released, open the pan and mix gently. (Image 11 and 12)
  • Ready to serve.
