Carrot Almond Kheer | Carrot Badam Payasam | கேரட் பாதாம் பாயசம்
Ingredients :
Carrot - 2 cup (grated)
Almond - 30 no (blanched) + 5 no (garnish, blanched, chopped)
Milk - 1 liter + 1/2 cup
Sugar - 3/4 or 1/2 cup
Cardamom - 3 pod
Method :
Pressure cook milk (1/2 cup), carrot and almonds for 1 whistle and 3min in simmer.
When all the steam has escaped, open pressure cooker and leave it cool completely.
Grind 3/4 carrot-milk-almond mixture into smooth paste.
Boil milk and add ground paste, remaining carrot-milk-almond mixture and sugar, cook for 15 to 20min in simmer and ready to serve.
Serving Suggestion : Serve warm or cold.
