Besan Flour | Kadalai Maavu - 1\2 cup
Sugar - 3\4 cup
Karkandu | Crystal Rock Sugar - 1 tbsp
Cashews - 10 no
Cardamom Powder - 1\2 tsp
Cloves - 3 no
Ghee - 1tbsp
Salt - pinch
Oil for deep fry. |
Steps To Make the Boondi Ladoo Recipe:
- To make the boondi batter, mix the besan flour and salt in a mixing bowl, add 3\4 cup of water (+ or -), whisk well without lumps. (Image 1 and 2)

- To make the boondies, heat oil for deep fry in a kadhai, hold a boondi strainer or a perforated ladle with one hand, and with the other hand pour some of the boondi batter on to the boondi strainer. so it drops into the oil as small pearls. (Image 3)
- Fry the boondies till soft also should not be crisp. Transfer into paper towel to absorb excess oil and set aside. (Image 4 and 5)
- Do the same for the remaining batter.
# For each and every batch, rinse and dry the boondi strainer or perforated ladle so that the boondi batter has been easily passed trough the holes.

- To make the sugar syrup, heat the sugar and 1\2 cup of water, mix well and cook till half-thread consistency. Then turn of the flame. Add the cashews, cardamom powder, cloves and ghee. (Image 6)
- Then stir in the prepared boondies and karkandu, press the mixture little with ladle and let them cool little to absorb the sugar syrup. (Image 7)
- Once the mixture cools and absorbed the syrup syrup means, take small portions, roll into balls and the ladoo is ready. (Image 8)
