Milk - 1 liter
Sugar - 1\2 cup
Palkovaa | Sweetened Khoya - 100 gm
Fresh Cream - 1\2 cup
Vanilla Essence - 1 tsp |
Steps To Make The Madurai Special Bhai Ice Cream:
- Heat the milk in a heavy bottom kadhai, bring to boil and cook until it reduce into half liter. (Image 1 and 2)
- Turn the flame into simmer.

- Parallely to make the caramel, heat the sugar and two tbsp of water in a saucepan, cook over simmer till it turns golden brown colour. (Image 3, 4 and 5)

- Then carefully add the caramelized sugar into the reduced milk. Stir it well till it dissolves. (It bubble like volcano so carefully add the caramel). (Image 6 and 7)
- Add the palkovaa and again stir it well till it dissolves without lumps. (Image 8)
- Then the fresh cream and essence one by one and mix well. (Image 9 and 10)
- Cool them completely and bhai ice cream mixture is ready. (Image 11)

- Transfer the mixture into the bowl and freeze them for two hour and then blend it well. (Image 12 and 13)
- Again freeze them for two hour and blend it well. Repeat the process for 4 to 5times. (Image 14)
- Now the smooth ice cream is ready to serve.

Serving Suggestion: Serve the madurai bhai ice cream with the jigardanda or gulab jamun.
