In traditionally this laddu is made with only two ingredient of kambu and karuppatti syrup. To enhance the taste and flavor I used some cashews, cardamom and ghee. It looks hard and little tight. Karuppatti | Palm Jaggery - 400 gm |

Steps To Make The Kambu Karuppatti Laddu | Pearl Millet And Palm Jaggery Laddu Recipe:Preparations, dry roast the kambu in a heavy bottom kadhai over medium flame till the colour change and pops. Then cool the roasted kambu completely.To make the karuppatti syrup, heat a cup of water, add the karuppatti and stir in between to dissolve it. Then cook for an minute and keep aside. Grind the roasted kambu and cardamom into fine powder. |
To make the laddu, heat the ghee in a heavy bottom kadhai, roast the cashews till golden colour and turn off the flame. Add the ground kambu flour and mix well altogether. Filter the karuppatti syrup (should be warm) into the kambu flour little by little, mix well and make laddu. Once the laddu are cooled they turns into little hard. Store the laddu into a air tight box. |
My Notes: Laddu's are looks hard and little tight only due to karuppatti syrup, but it is healthy. Also use heavy bottom kadhai to roast the kambu evenly. Else it will burnt and can't roast well.
