Pasi Paruppu - 1\4 cup |
Oil - 2 tbsp |
Mustard Seeds - 1\4 tsp |
Asafoetida - 1\4 tsp |
Sambar Onion - 1\2 cup (finely chopped) |
Crushed Garlic - 3 to 4 nos |
Green Chili - 2 nos (slit) |
Tomato - 1 no (finely chopped) |
Turmeric Powder - 1\4 tsp |
Cumin Seeds Powder - 1\2 tsp |
Salt - as required |
2nd Coconut Milk - 1\2 cup |
1st Coconut Milk - 3\4 cup |
Coriander Leaves - 3 to 4 stk (finely chopped) |
Method : |
Preparation, remove the outer hard skin and center hard part with the sharp knife. Cut the flush into small pieces and immerse in the water, to avoid discoloration. For this kootu, we need one cup of palakaai only. To cook the pasi paruppu, take a pressure cooker pan, add a cup of water, bring to boil, place the pasi paruppu with half a cup of water in a bowl, cover the pan with lid, cook for an whistle and three minutes over simmer. When all the steam has released, open the pan and keep aside the pasi paruppu. |
To make the kootu, heat the oil in a pressure cooker pan, temper the mustard seeds and urad dal. After splutter stir in the asafoetida. Add the onion, garlic, green chili and curry leaves, saute till the onion turns slightly golden colour. Add the palakaai and saute for an minute. Add the tomato and cook till soft. Add the cumin seeds powder, turmeric powder and required salt, saute for an minute. |
Add the second coconut milk, mix well and bring to boil. Cover with lid, pressure cook for an whistle and five minutes over simmer. When all the steam has released, open the pan, add the first coconut milk, mix well and boil for an minute. Finally add the coriander leaves, mix well and the palakaai kootu is ready. |
Notes: To easily handle the palakaai, grease your palms and then cut to avoid stickiness. Also immerse the palakaai flush in the ordinary water to avoid discoloration. Add the first extract coconut milk at last for the best taste and also no need to cook more than an minute. |

Boil for an minute. Finally add the coriander leaves, mix well and the palakaai kootu is ready. |
