Egg - 4 no + 1 no
Coconut - 1/4 cup (chopped)
Shallots - 3/4 cup (chopped)
Tomato - 1 no (chopped)
Garlic - 10 cloves
Green Chilli - 3 no
Cloves - 3 no
Cinnamon Stick - 2 no (2" long)
Fennel Seeds - 1/2 tsp
Turmeric Powder - 1/4 tsp
Coriander Leaves - 2 tbsp (chopped)
Curry Leaves - 1 stk
Water - 1 and 1/2 cup
Oil - 2 tbsp
Salt to Taste. |
Preparation :
- To make the kurma paste, grind the coconut with green chilli and fennel seeds into fine paste with required water and keep aside.

Steps To Make The Egg Kurma :
- First boil the egg with enough water for 5mins (+ or -) and allow to cool completely. (Image 2)
- De-shell the egg and slice into half and keep aside. (Image 3)
- To make kurma, Heat oil in a pan, roast the cloves and cinnamon stick, stir in the shallots, garlic and curry leaves, saute till the shallots becomes light brown colour. (Image 4)
- Add in the tomato and saute till the tomato becomes tender. (Image 5)

- Then stir in prepared coconut-mixture paste and saute for half a minute. (Image 6)
- Pour the water, mix all, bring to boil and cook for about 5 minutes or till the masala raw smell leaves. Then break an egg into the kurma, mix well and cook for an minute. (Image 7)
- Add the sliced egg and cook for 3minutes over simmer. (Image 8)
- Finally add the coriander leaves and ready to serve. (Image 9)

Serving Suggestion :
Serve hot with Fried Chicken and White Rice.
