Ingredients :

Muskmelon Fruit Kheer | Kirni Pazham Payasam - Summer Fruit Juice
Muskmelon \ Kirni Pazham - 1/3 no (de-seeded, pulp)
Milk - 500 ml
Sugar - 1/2 cup to 1/4 cup
Cashew-nuts - 15 no
Cardamom Powder - 1/4 tsp
Ghee - 3 tbsp

Method :

Preparation :

  • Slice the muskmelon \ kirni pazham, scoop out the seeds and discard, then scoop out the pulp into a bowl and smash well by using big ladle, set aside. (shown in above image)

Steps To Make The Muskmelon Kheer | Kirni Pazham Fruit Juice :

  • Boil the milk and allow to cool completely. (Image 1)
  • Meantime heat the ghee in a non-stick pan \ kadai, roast the cashew-nuts and keep aside. (Image 2)
  • Then stir in muskmelon pulp (smashed) for about 12 to 15 minutes over simmer. (Image 3)
  • Add the sugar and cook till the sugar dissolved completely, then turn off the flame and allow to cool completely. (Image 4)
  • Once cooled, add the cooled milk (hot milk may curdle) and mix well. (Image 5)
  • Add the roasted cashews, mix further and serve chill. (Image 6)
