Badam Pisin - 1 tbsp (small pieces)
Milk - 1 liter + 1 liter
Sugar - 1\4 cup + 1\2 cup
Vetriver | Nannari Essence - required
Madurai Bhai Ice Cream - required |
Preparation :
- Soak the badam pisin with 2 to 2 and 1\2 cups of water for 8 to 10minutes or overnight. Next day it becomes like jelly and keep aside. (Image 1 and 2)

- To make the basundi, heat a liter of milk in a heavy bottom kadhai, bring to boil and turn the flame into simmer by stirring frequently. Collect the skin to the corner of the kadhai. (Image 3 and 4)
- Then add the 1\4 cup of sugar and cook until its dissolved. (Image 5)
- Using knife, take out the collected skin, add into the milk mixture, mix well and keep aside. (Image 6)

- To make the caramel milk, heat a liter of milk in a pan. (Image 7)
- Separately caramel the sugar until golden brown colour. (Image 9)
- Carefully add the caramelized sugar into the boiling milk, cook until the caramel bits dissolved into the milk. (Image 10)
- Then refrigerate the basundi and caramel milk for an hour or till use.

Steps To Make The Madurai Special Jil Jil Jigarthanda :
- Take a cup or a glass, add a teaspoon of vetriver essence. (Image 11)
- Add 2 tbsp of basundi. (Image 12)
- Add half a cup of caramel milk. (Image 13)
- Add 2 tbsp of badam pisin. (Image 14)
- And serve with madurai bhai ice cream.
