Healthy Paruthi Paal | Cotton Seeds Milk - 2nd Anniversary Recipe

Paruthi Vithai \ Cotton Seeds - 100 gm
Karuppatti \ Palm Jaggery - 150 gm
Vellam \ Jaggery - 100 gm
Coconut Milk - 3 cups
Thinai Maavu | Foxtail Flour - 1/4 cup
Sukku \ Dry Ginger - 1/2 tsp
Cardamom - 3 no (crushed)
Grated Coconut - 1/4 cup |
Preparation :
- Soak the paruthi vithai \ cotton seeds over night with enough water. (Image 1)
- Wash 3 to 4times and remove the impurities.
- Make the karuppatti \ palm jaggery and vellam \ jaggry syrup with a cup of water, filter and keep aside.

- Grind the paruthi vithai \ cotton seeds into paste with a cup of water. (Image 2 and 3)
- Place a muslin cloth over another bowl and transfer the paruthi mixture into the cloth. (Image 4)
- Tie up the ends of the muslin cloth and squeeze out all the milk extract from the paruthi and you get thick paruthi pal \ cotton seeds milk. (Image 5)
- Then again grind the paruthi solids with 2 cups of water and extract the milk and keep aside.

Steps To Make The Healthy Paruthi Pal \ Cotton Seeds Milk - Like Payasam :
- Heat the prepared paruthi pal (thick and thin) in a pot, bring to boil and cook for 5mins over simmer, by stirring frequently. (Image 6)
- Separately dissolve the thinai flour with some water (Image 7) and mix into the boiling paruthi pal, and cook for 3mins more over simmer, stirring frequently.
- Add in the filtered karuppatti \ palm jaggery and vellam \ jaggery syrup into the paruthi pal mixture, mix well. (Image 8)
- Bring to boil and cook for an minute.
- Sprinkle the dry ginger and cardamom powder, mix well. (Image 9)
- Add in the coconut milk and grated coconut, mix well, bring to boil and remove from the flame, ready to serve. (Image 10 and 11)

Serving Suggestion : Serve warm or chill with crispy butter murukku

Actually the paruthi paal \ cotton seeds milk has to consume at the same day, you can also refrigerate for 2 to 3 days, but its flavors and taste might be differ.

Hi harini mam, sorry for the late reply, If the coconut milk is too thick and over boiled means, it will curdle the paruthi pal. But the karuppatti syrup will never curdle. Also thinai flour helps to thicken the mixture.
